Xiaolongbao
“Xiaolongbao” is a traditional and common snack in south China, it has Hangzhou characteristic because the local restaurant “Zhi Wei Guan” can make the best “Xiaolongbao”, so it is called “Zhi Wei Xiaolong”. It’s using the best materials and making meticulously. “Xiaolongbao” consists of a ball of minced pork (sometimes with an added dollop of crab or crab roe), wrapped in a pleated flour dough skin, which is then steamed. But every “Xiaolongbao” also holds a delightful surprise: there's a spoonful of hot soup, made from chicken or pork, sometimes both, inside. Usually dip it into vinegar or spicy sauce before eating.
