Fermented bean curd with pork is just a common dish, but why it was entitled with High Ranking? By the end of Southern Song Dynasty (1127-1279)，the Mongolians invaded the country，trying to take over the temporal capital LinAn . A corrupted minister called Jia Sidao suggested the emperor to surrender. In fact, the bad minister suppressed a lot of loyal officials and took countless briberies. While the nation was exposed to invasion, he still turned a deaf ear to such a crisis. The people hated him so much that they imagined the fermented bean curd pork as the flesh from the corrupted minister and ate it. That is why the dish was entitled High Ranking as it symbolizes the minister.
