Cat’s ear
Cat’s ear is actually a kind of noodle without the traditional shape, flour-made dough. It got this name because it looks like cat’s ear. It’s boiled with chicken shreds, ham, mushroom, shrimps and bamboo shoots, can be served as dessert or hot dish. People from south China like this food, because it is cooked delicately and deliciously, and can be eaten gracefully with a spoon. This is another must-order snack in the famous local restaurant “Zhiwei Guan”.
The food is related to one of the most prominent emperors in China’s history – Emperor Qianlong (1711-1799) of Qing dynasty. He had travelled to Hangzhou three times, secretly, because he loved the beautiful scene, diverse culture and graceful women in Hangzhou. A boatman’s granddaughter cooked this cat’s ear for the emperor when he took their boat to cruise West Lake. The emperor appreciated it very much and ate many of it, that he showed his identity to that girl. When the girl grew up, she opened a noshery to sell this royal cat’s ear.
